Thai Beef Larb Salad. It is a flavorful and light salad that can be enjoyed as a full meal or as a lite salad. Here are the ingredients and instructions:
Ingredients:
For the Dressing:
1/2 tablespoon brown sugar or honey
Pinch red pepper flakes
1/2 teaspoon coriander powder or fresh coriander
3 tablespoons lemongrass paste or a couple of stalks sliced thin
1 garlic clove, minced
2 tablespoons fish sauce
1/4 cup fresh lime juice
For the Larb Salad:
1 lb. Laura’s Lean 96% Lean/4% Fat Ground Beef
1.5 tablespoons avocado oil/olive oil
1/2 cup chopped sweet onion
1/2 teaspoon more or less to taste red pepper flakes
3 cloves garlic, minced
1 red chili, sliced
3-fingered pinch salt
1/4 cup rough chopped parsley
1/4 cup rough chopped cilantro
1/4 cup torn Thai basil or basil leaves
2 tablespoons torn mint leaves
1 heaping cup cucumber pieces
1/4 cup thinly sliced red onion or pickled red onion
Black pepper to taste
Iceberg lettuce or lettuce of your choice OR sticky rice
Instructions:
Combine dressing ingredients in a mason jar and shake until emulsified and combined. Set aside.
Prep your salad ingredients and set aside.
Add oil to a large skillet, heat and then add in onions and sauté for a couple of minutes.
Add in garlic and red chili peppers and sauté for 1 minute.
Add in ground beef and sauté until almost cooked through.
Carefully remove excess liquid from pan with a paper towel, then add in a splash of the dressing. Finish cooking through, remove from heat and add in remaining ingredients.
Enjoy over shredded lettuce as a salad or over sticky rice. Drizzle with remaining dressing and enjoy.
Optional: Top with chopped peanuts.
