Peppermint Mocha Cake Balls

Ingredients:

  • 1 chocolate cake mix, baked according to package directions
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 2 tsp peppermint extract
  • 2 tbsp instant coffee granules, dissolved in 1 tbsp hot water
  • 16 oz dark chocolate, melted
  • Crushed candy canes for garnish

Instructions:

  1. Crumble cooled cake into fine crumbs in a large bowl.
  2. Beat cream cheese and powdered sugar until smooth. Add peppermint extract and coffee mixture.
  3. Mix cream cheese mixture into cake crumbs until well combined.
  4. Form mixture into 1-inch balls. Freeze for 30 minutes.
  5. Dip balls in melted chocolate, tap off excess.
  6. Sprinkle with crushed candy canes before chocolate sets.
  7. Refrigerate until firm, about 1 hour.

Makes approximately 40 cake balls
