Blackened Chicken

Ingredients:
3 tablespoons smoked paprika
1 tablespoon kosher salt (less if salt is an issue)
1 tablespoon onion powder
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried oregano
1 1/2 teaspoon cayenne pepper (more or less to taste)
4 boneless chicken breasts
Oil for cooking (avocado, olive, grapeseed)
Instructions:
Combine all spices in a small bowl or mason jar. Stir or shake to combine.
Clean the chicken breasts by trimming any excess fat. Place each chicken breast in between parchment paper or a gallon baggie and pound with a rummer or meat mallet to ensure even thickness for even cooking and to tenderize the meat.
When ready to cook, season each chicken breast liberally with the blackening seasoning.
Heat enough oil (avocado, olive, grapeseed) in a large nonstick pan or cast iron skillet to just barely cover the bottom. Once the oil is hot (you will see a shimmer like tiny ripples), place the chicken into the pan and cook about 4 minutes per side or until done. Cook time will depend on the size and thickness of the chicken breasts.
Allow chicken to rest for a few minutes, then serve and enjoy!
