Ingredients:
For The Cookies:
- 1/2 cup unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 1 egg, at room temperature
- 2 teaspoons vanilla extract
- 1 3/4 cups all-purpose flour
- 1 tablespoon milk
- 1/2 teaspoon salt
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 1/4 cups blueberries
- 4 tablespoons blueberry jam
For the Streusel Topping:
- 3 tablespoons butter, at room temperature
- 2 tablespoons brown sugar
- 2 tablespoons granulated sugar
- 1/3 cup flour
- Pinch of salt
Instructions:
-
Preheat your oven to 350°F and line a cookie sheet with parchment paper. Set it aside for later use.
-
In a stand mixer fitted with the paddle attachment, beat the unsalted butter and granulated sugar together until it turns light and airy. This should take around 2 minutes.
-
Use a rubber spatula to scrape down the sides of the bowl, then add the egg and vanilla extract. Beat until the mixture becomes smooth and fluffy, which should take about 2 minutes.
-
Now, it's time to add the all-purpose flour, baking powder, baking soda, and salt. Mix everything on low speed, gradually increasing to high, until there are no streaks of flour left. Add the milk and mix until everything is combined. Be careful not to over mix.
-
Gently fold in the blueberries to ensure they are evenly distributed throughout the dough.
-
Drop spoonfuls of the blueberry jam into the dough, and fold it a few times to create big ribbons of jam. Don't overfold; we want those lovely pockets of blueberry goodness to shine!
-
In a separate bowl, combine all the ingredients for the streusel topping. Use a fork to mix until it becomes crumbly and clumps together.
-
Use a 1.5 ounce cookie scoop to scoop out the dough onto your prepared baking sheet. Top each cookie with a generous spoonful of the streusel topping, and press it into the dough.
-
Bake the cookies for 12 to 15 minutes, or until the edges are set, but the centers remain a little doughy. Allow the cookies to cool completely before indulging in their deliciousness!
